Huntington Beach, California--The Californian is the premier restaurant at Hyatt Regency Huntington Beach Resort & Spa. It serves breakfast, lunch, dinner and elegant weekend brunches and holiday brunch menus.
Executive Chef Chris Savage helped launch the Hyatt in Huntington Beach when it opened in 2003 and today, he says that dining has changed considerably. He should know. The exec prepares banquet menus for the countless corporate events, conferences and weddings hosted at the resort. He also sets the menus for the restaurants and the trends he has noticed are exciting.
Healthier meals with less calories are what people seek these days, said Savage, whose focus is local, fresh, and healthy.
"We're seeing a lot more fish being ordered," says Savage. And butter & cream? "No, we're opting for healthier sauces and methods of preparing delicious and complimentary flavors to the meets such as reductions."

"Lamb is quite popular," he said. "It is ideal for the spring and summer menus we'll be rolling out so be sure to visit our restuarants--The Californian and the more casual Pete's. "
