The pumpkin bisque recipes are as vast as your imagination. This
particular recipe is easy to fix, and tried & true. It's sure to please as a
Fall meal or special course to an elegant dinner (or brunch).
Ingredients
2cups pumpkin, butternut squash or sweet potato
2tablespoons olive oil
1 ½cup white onions, diced
3 ½cups vegetable stock
5cloves roasted garlic
¼cup sherry wine
1 ½tablespoons maple syrup
½teaspoon cinnamon
¼teaspoon cayenne
½teaspoon sea salt
Black pepper, to taste
Garnish
with toasted pumpkin seeds
or pumpkin seed oil if you like. Other festive garnishes include
a green sprig, or white swirl or drizzle of thinned sour cream
or thinned, non-flavored yogurt.
