As you prepare for the rites of summer by getting out your BBQ grill to cook hamburgers, Santa Maria tri-tip or hot dogs for Memorial Weekend, we’d like you to take a moment to remember and recognize two summers ago in 2011. It was a typical warm summer day in Pleasanton but things were about to get a whole lot hotter as teams of chefs supervised and helped cook the monster 777 pound hamburger at the Alameda County Fair.

For those who are cooking this weekend, here are some hamburger tips:

  • Choose the right meat–  20% fat is good. Get ground beef or ground chuck with 20% fat.
  • Use high heat and cook fast. If you leave burgers on the grill too long, they dry out.
  • Don’t pack the patty too tight, and don’t smash the juice out of the burger with your spatula. Juicy is best!
  • Flip the burger once.  When you see the juices form on top, the inside meat is getting cooked.
  • A typical burger takes about 10 minutes to cook:  5-6 minutes on one side, then another 3-4 minutes after flipping.
  • Personal favorite – add sea salt instead of regular salt.
